Grain to Bottle to Cocktail
Chicago’s 8,000 sq ft CH Distillery may be the city’s first vodka-focused, grain-to-bottle producer using local Illinois grains, but partner Tremaine Atkinson sure didn’t want their list of firsts to end there. To that end, at this unique new West Loop concept you can not only witness the distilling experience first-hand in their ‘science of alcohol’ tour, but also extensively sample the spirits at the swanky built-in cocktail bar, also offering an accompanying food menu from the acclaimed JP Doiron and Jesse Katzman (Avec).
Sample the signature CH Vodka – made from local winter wheat and distilled 20 times – in an ice-cold carafe served along with hackleback caviar, take it as a shot complete with rye bread and side of pickles, or try it in a cocktail like a classic Moscow Mule or a creative Czech Mate with cinnamon spice, grapefruit juice, and honey syrup. CH also produces two gins – the lighter Key and classic London Dry – as well as lightly-aged, oak-barreled whiskey and rum. There’s plenty of cheese and charcuterie to pair, or try plates like the corned duck with liverwurst, beet and gin-cured gravlax, and melt-in-your-mouth shiitake Pâté. The city’s first distillery-bar in one? Check.
