Lady M Confections
It might seem like the simplest of ideas – a glazed confection consisting in 20 crêpes layered with cream – but many have tried and failed to imitate Lady M’s multi-storied Mille Crêpes cake. Although the revered Manhattan bakery is very secretive about how they achieve such pancake perfection, the key is (apparently) in the execution: the lacy crêpes need to be just thin enough to avoid fork friction, the lightened pastry cream needs to be just thick enough to prevent slippage, while the sugary crown must be torched to a near-nutty caramel crisp. Mouth watering already? Well, fear not angelenos, Lady M has finally landed on the West Coast!
Carrying their trademark slick finish, the LA store is a bright white open-sided box with not even a cash register in sight, just a smooth glass pastry case cutting through the room. What little colour and texture there is comes from the cakes and pastries themselves – the dark Miroir Caramel is a reflective, smoky caramel, atop creamy caramel-chocolate mousse and sponge; or the Tarte Aux Fruits is vibrant with glazed kiwi, blueberries, mangoes, and strawberries neatly piled over vanilla custard, and an almond financier base. With featherlight eclairs, croissants and delicious sandwiches also on offer, your only difficulty will be choosing which to try first.
