Some say if it isn’t broken, don't fix it, while for others like Puck’s iconic Spago restaurant (link to previous Pen article for L.A.), Coca-cola and most famously, Madonna – reinvention is the key to longevity. It seems Beijing’s Pavilion subscribes to the latter philosophy, as evidenced by the newly revamped space that reopened mid-2012 as Pavilion Grille. What was once a popular and rowdy sports bar was transformed into a glamorous and luxuriously-appointed, multi-zone space, with a brand new A-list team at the helm, including chef Billy Bolton of Chef Too fame.

From the spacious atrium and glittering chandelier centerpiece to the plush fabric furnishings and artwork-lined walls, the new Pavilion is a far cry from the old incarnation. Although the look has taken it up several opulent notches, the taste remains accessible and straightforward, with an emphasis on grilled-to-perfection steak, seafood and Azerbaijani-style skewers (courtesy of the native grill chef), with a few indulgent dishes and accompaniments such as caviar, foie gras and Canadian lobster peppering the menu. Add in an extensive wine and premium champagne list, and a verdant outdoor patio of green umbrellas and comfy lounges, and you’ve got the perfect spot for a delicious long lunch, or romantic evening interlude.

From Ming to bling in 60 seconds, Beijing’s meteoric rise to world-shattering super-city is as unrelenting as it’s astonishing. Steeped in history and mystique, from its fast disappearing hutongs to its staggering new skyscrapers, the capital of China is without doubt one of the most exciting places to be on the planet.
